STUDY OF FACTORS DETERMINING QUALITY OF BROILER CHICKEN MEAT PROCESSING PRODUCTS PRODUCED IN THE URAL REGION AND EVALUATION OF THEIR VARIABILITY
Potoroko I.Yu., Tsirulnichenko L.A., Krasulya O.N.
The most important problem determining inconsistency of the quality of currently saleable meat products, including poultry processing products, to customers’ expectations is presence of deviations of raw material parameters responsible for their producibility. One of the most important components in meat chemical composition, both in terms of processibility of raw materials and ensuring biological nutritive usefulness is protein. Calculation of the variability index will allow to conduct generalized evaluation of scattering of chemical composition parameters. One of perspective methods to control process qualities of meat for processing is application of ultrasonic impact effects in the technology of producing semi-finished products from broiler chicken meat at the water treatment stage as a means to minimize risks in conditions of the source raw material quality uncertainty.
